We proudly serve La Cabra as our house roast — the first place in London where you can enjoy their seasonal, rare, and vibrant coffees on both our espresso and filter menus, as well as on our retail selection to take home.

Brewing with La Cabra

The brewing process is as meticulous as it is passionate. When brewing espresso and filter the team precisely controls each shot and batch, while the specially treated RO water ensures that every brew and espresso is consistently flavourful.

This thoughtful approach not only elevates La Cabra coffees but also turns each serving into a lesson on the depth and complexity possible when excellent raw material is treated with care. For batch brew, we brew with a MoccaMaster so we can brew smaller batches, and have more control over each batch. We use 85-100ppm RO water which helps us deliver superb tasting filter.

As part of our guest roaster series, we regularly showcase new roasters and experimental lots — featured both as our espresso guest and across our batch brew and hand brew menus. For many, this means a chance to try something a little more unusual or unexpected every few weeks, or even discover a new favourite roastery along the way.
